What's this recipe I hear you ask? Blue Cheese Macaroni Pie This is serious adult stuff! The little ones just might find this a little too strong for them. However, I made this to go with my Jerked Chicken Curry, which you can find over on the recipe page, but, I have to warn you, the combination of the two: Blue Cheese Macaroni Pie AND Jerked Chicken Curry is seriously "food to calm the soul" you have been warned!!!

Now you know those tins of macoroni cheese, or the stuff you were served at school way back when? Be assured, this is not that! I serve my baked Blue Cheese Macaroni Pie with Jerked Chicken Curry, but it's perfect straight from the dish, for a lunch with a side of salad, or toast, my choice is baked beans though! But, as I like mine straight from the dish, just a dash of Worchestershire sauce and a spoon please! :-)

ingredients

Here's what you need :¬)

for the macaroni

  • 1 cup / 125g Macoronini
  • 2 Pints water
  • 1 tsp Salt

for the cheese sauce

  • 50g Butter
  • 50g Flour
  • Pinch of Salt & black pepper
  • 1 tsp Dijon mustard
  • 1 tsp English mustard powder
  • 1 tsp Onion powder
  • 1 OXO™ vegetable stock cube
  • 150g Extra mature (No. 6 strength) cheddar cheese
  • 1 Pint of whole or semi-skimmed milk
  • 200g Blue Stilton Cheese
  • 1 Tomato sliced
  • Pinch of Cayenne pepper

Save a little cheese for the top :-)

    method

    Using a kettle to get water hot is cheaper than heating in a pan and so much quicker too. So, pop a couple of pints of water on to boil, pour it into a pan, tip in the macaroni, add a tsp of salt and boil until the pasta is just cooked—it'll carry on cooking when you bake it in the oven. As soon as your macoroni is in you can start your cheese sauce

    1. Melt the butter in a small - med pan on med' heat
    2. Add all the flour
    3. Add the onion powder with the English & Dijon mustard
    4. Stir with a whisk or spoon to make a roux

    1. Add a little milk at a time while whisking

    Don't worry about the lumps, keep stirring and whisking as you add the milk, they will melt into the sauce

    1. Stir continuously on a med' heat to form a thick white sauce

    1. When thickened, it should coat the back of a spoon
    2. Turn the heat off
    3. Add the cheddar cheese

    1. Stir until the cheese has melted

    1. Drain the cooked macaroni & add to the cheese sauce

    1. Pour the macaroni cheese into a greesed oven-proof dish
    1. Chop your Blue Stilton Cheese into cubes and dob onto the top of the dish
    2. Arrange tomato slices on top
    3. Sprinkle a little pinch of Cayenne pepper

    1. Bake in a pre-heated oven for 15 to 20mins @ 180c
